You might get official info from Ethical Guidelines. If you've shown your book and the client agrees to proceed, based on what you've done, you should get partial payment because you are commiting to their project. This is typically 1/3 to 1/2 of the agreed upon fee for the logo. You can't let the client think you have no business sense or they will walk all over you. If you get the feeling that this client is going to try to pull a fast one (restaurants are notorious), don't accept the project. Another hint, don't show more than two or three ideas, if you do, that'll encourage them to play mix and match, and ultimately come to like nothing.
