For Photoshop, try Adobe's Classroom in a Book.
It's available for both Mac and Windows versions. I'm not
familiar with anything for Fractal Design Painter.

: Because of time constraint, I plan to learn these programs on my own rather than taking courses. "Sink-or-Swim with a manual" is not a learning method that works for me. The ideal workbook would be clearly written, with sequenced instruction for beginners. In addition, assignments are given for topics covered and samples are available either in print or in CD-ROM.
